Although not your traditional holiday cookie,
Fresh Mint Butter Cookies
would be a yummy addition to that cookie plate
that you gift your neighbors each year
(not everyone likes chocolate and nuts!)
or perfect to serve for a Christmas Tea gathering.
Or, perhaps you could nibble a few
while you are sitting quietly,
making your list,
and checking it twice!
Fresh mint? In winter?
Most grocery stores carry fresh mint
in the produce section year round.
At the very least,
you'll want to save this recipe
for your summertime baking!
Fresh Mint Butter Cookies
1-1/2 cups flour 1 egg
1/8 tsp. salt 2 TBS milk
1/2 tsp. baking powder 4 TBS chopped fresh mint
1 stick butter 1/4 tsp. vanilla
2/3 cup sugar
Cream butter. Gradually add sugar. Add egg, milk, vanilla, and beat thoroughly.
Mix dry ingredients together with chopped mint. Add to dough. Let chill overnight.
Drop by teaspoonful 2" apart on greased cookie sheet at 350 for
10 - 12 minutes. (I use parchment paper.)

Oh, my goodness! I have never heard of using fresh mint in a cookie!! I love it, especially rolled and cut in stars. Looks delicious!

These look SO good! We have lots of mint in season--even though we've had a hard freeze (more than once), I'm going to take a look and see if I can find enough mint for a batch of these! Yum! Thanks for sharing!
This sounds delicious and refreshing! My mom always had fresh mint growing by our front door. Now I wish I had some of it, but grocery store mint will have to do. Would these be good with chocolate drizzled on them? I have some die-hard chocolate and mint lovers in my family. Thanks for sharing this great recipe and playing along.

Like Carol, my first thought was to drizzle chocolate on them. They sound delicious and I bet go equally as well with hot chocolate in the winter and ice tea in the summer.

Definitely looks like something I want to try, and I have mint on my back deck still, for a couple more days at least! Looks like you can roll out and cookie cutter, too. These sound so delicious, I wish I had some already baked!
